Every year, around 75,000 servings of Carver Cones are dished out during the winter sports season at Carver-Hawkeye Arena. To uncover why this frozen treat captivates so many, Iowa Magazine turned to fans and the experts at Aramark, including Mark Duffy and Jordan Lewis (21BA), who manage food services for Hawkeye Athletics. Here’s what we found about the allure of the Carver Cone.
It’s a cherished game-day ritual.
Two days before fans arrive, the ice cream machines are meticulously prepared. Locally sourced Carver Cone mix is delivered and ready to be transformed into the beloved soft-serve ice cream. Just before the arena opens, the machines begin their magic, creating the perfect texture that fans have come to expect.
The atmosphere enhances the experience.
The nostalgic environment of Carver-Hawkeye Arena heightens the appeal of the Carver Cone. Although available elsewhere, it’s most popular here, especially during women’s basketball games where fans enjoy nearly 170 gallons of it each game. “No matter how old you are, it seems to bring back the kid in you when you get your cone,” says Duffy.
Its reputation precedes it.
Despite facing stiff competition from other concessions, the Carver Cone remains one of the most cherished treats, thanks to its unique appeal. Duffy notes, “From my experience, no one’s signature item quite has the impact that the Carver Cone has.”
Flavor variety keeps fans intrigued.
The favorite combination is raspberry-chocolate twist, with raspberry alone and the classic vanilla-chocolate twist also being popular. The raspberry flavor, sourced from a small Midwest company, has become so popular that Aramark has doubled its order to ensure its availability.

Carver Cones are made with a commitment to excellence, a standard set by the late Pete Rourke, who was a pivotal figure in Carver-Hawkeye Arena’s concessions. To maintain quality, Aramark frequently replaces the ice cream machine blades, ensuring each cone meets the high expectations of fans.
Athlete endorsements add to its charm.
Many athletes, including Kate Martin (22BS, 24MA), Gabbie Marshall (23BA), and NFL player George Kittle (16BA), have been seen enjoying Carver Cones. Their enjoyment is often shared on social media, further boosting its popularity.

Not only is the Carver Cone a delicious treat, but it also supports local causes through community volunteers who staff the machines. Duffy mentions that crafting the perfect cone takes practice, but even an imperfect one is just as tasty.
