Ingredients

  1. 1 1/3 cup almond flour (or substitute with 1 cup oat flour)
  2. 1 cup peanut butter
  3. 3 tablespoons maple syrup (adjust to taste for sweetness)
  4. 2 teaspoons vanilla extract
  5. 1/2 cup chocolate chips (or 1 cup for more chocolate flavor)
  6. 1 teaspoon coconut oil
  7. Optional: Sea salt for garnish

Instructions

  1. Combine almond (or oat) flour, peanut butter, maple syrup, and vanilla in a bowl, stirring until the mixture is smooth and creamy.
  2. Shape the mixture into 1-inch balls and chill them in the refrigerator for 20 minutes.
  3. Using a microwave, melt the chocolate chips and coconut oil in a small bowl, heating in 30-second intervals and stirring in between until fully melted.
  4. Dip half of the peanut butter balls into the melted chocolate, then place them on a plate or tray. While the chocolate is still warm, sprinkle with sea salt. Repeat for all balls.
  5. Allow the chocolate to set by placing the balls in the fridge for an additional 15 minutes.
  6. Store the finished treats in the refrigerator to keep them fresh.
